About the Academy

Our History…

 Nathan Outlaw has always wanted to be involved in educating students and in nurturing talented young chefs, ever since he began his Cornish career at the Black Pig in Rock.  Currently taking the food world by storm, Nathan has earned himself 2 Michelin stars, published several books, regularly appears on BBC Saturday Morning Kitchen with James Martin and recently won the Chefs Chef award 2015, a prestigious accolade voted for by other high profile celebrity chefs.

Owner of five restaurants including the Michelin starred Capital restaurant in London and the two Michelin starred restaurant in Port Isaac, Nathan brings an infectious and captivating enthusiasm for preparing, cooking and presenting his famous dishes, which has earned him a growing reputation as one of the best fish chefs in the UK.

This passion for cooking reflects the exceptional standards that for over 40 years Cornwall College has brought to the table, which is demonstrated by the long number of talented chefs who started out their careers with us, including Rick Stein, Stewart Eddy and Tom Brown.

For wannabe chefs who want to study with us, our ethos is simple, we will provide each student with state-of-the-art equipment, access to a professional team of dedicated and industry experienced tutors, amazing training kitchens and world-class training restaurants.

At our last OFSTED inspection, it was stated that “Cornwall College is outstanding at meeting the needs of learners across all faculties”.


Together Cornwall College and Nathan Outlaw have built a successful and close working relationship, with Nathan currently employing a number Cornwall College students and more recently developing a dedicated apprenticeship programme.  Part of this relationship was developing a programme to help nurture young talent.  This programme became the Academy Nathan Outlaw.  Now in its 5th successful year, the framework for the content is based on our VRQ qualifications, with additional master classes, events and the opportunity to work in a Michelin star kitchen part of the Academy’s appeal.

Academy Nathan Outlaw aims to equip students with the skills and experience they need to become outstanding professionals in their field.


Our Programme and Progression…

 Our students are encouraged to join the Level 1 VRQ in Professional Cookery & Hospitality, this will give all our students the basic grounding they will need in order to move onto the Level 2 VRQ in Professional Cookery & Hospitality.  On Level 2, students will have the chance to join our Academy Nathan Outlaw, where they will receive training by Nathan himself, along with other members of his highly respected team.

This superb training can be extended onto Level 3, where students will have the opportunity to actually go and work for Nathan in a Michelin star kitchen or restaurant, a very rare experience, one to remember for a long time and great on your CV.

All Levels combine lots of practical and some theoretical work, with visits to leading businesses and events.  We encourage you to participate in attending local foodie festivals, where you could end up assisting celebrity TV chefs like Anthony Worrall Thompson in Porthleven.

Joining our Academy Nathan Outlaw will be a great way to receive world-class training from leading experts and will prepare you for working at the highest level, giving you the best chance to succeed in the exciting and demanding catering & hospitality industries.
